In a large mixing bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy. Beat in the pumpkin puree, egg, and vanilla extract.
Gradually mix in the dry ingredients until just combined.
Scoop the dough into 1-inch balls and roll them in the remaining granulated sugar. Place them on the prepared baking sheets about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
