Chewy Pumpkin Spice Sugar Cookies

Ingredients:

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Directions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. In a large mixing bowl, cream together the butter and 1 1/2 cups sugar until light and fluffy. Beat in the pumpkin puree, egg, and vanilla extract.
  4. Gradually mix in the dry ingredients until just combined.
  5. Scoop the dough into 1-inch balls and roll them in the remaining granulated sugar. Place them on the prepared baking sheets about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
